I am writing this post after a rather successful rehearsal at school with my awesome Music & Theatre Productions students who are in the process of putting on Our House; the brilliant Madness musical!  Knowing I would be ins school all day today I baked up some delectable delights last night so that I had some goodies for my work peeps on a dreary Monday morning.  So many fo you will know that it was only Wednesday that lent began and so my battle with our office begins – it used to just be 1 or 2 people ditching their sweet tooth cravings, but this year all the girls (bar me of course!!) have chosen to give up sugary based treats.  This makes my life very difficult as I am, at heart, a sweet baker through and through.  That doesn’t mean I don’t love savoury, you’ll see in my previous posts that I do relish a savoury challenge, however I am at my happiest when I am at my sweetest :) .  That’s why this is a double WHAMMY post…a savoury recipe which gives you the core ingredients needed for a sweet based bake too.  The Coffee & Nutella Kisses are made from the left over egg white from the Marmite, Cheddar & Parmesan Morsels; and we all know I HATE waste, so it was inevitable that all parts of the egg would be used! This pie has been a bit of a favourite each time I’ve made it but I got a very specific request from my mate Ollie’s Dad.  This is normally a Cheshire Cheese pie but Peter is a very proud Lancashire man and was adamant that the only kind of cheese pie should be one with Lancashire cheese in.  The fab thing about this pie is that the type of cheese can be any that you favour most; just be aware that drier crumblier cheeses will need an additional creamier cheese to help bind the pie together and to save it from drying out.  I found the initial recipe on the Baking Mad website which is wonderful and you should definitely sign up so you can receive their free emails. Cranberry & Mince Pies

Mmmm a true festive treat…with a little additional fruity twist…cranberry sauce!

Now anyone who knows me, is aware of the fact that I LOVE a good bargain! From my school frocks that total £3.50, thank you ASDA, to the various ‘whoops’ items in the chilled cabinet and the Christmas decorations I now buy on Boxing Day for the following year at 75% discount.  Old?! Me?! No! Just wise hehe!  Anyhoo…the way this tenuous rant links to mince pies is simple.  Sainsbury’s like to sell off mincemeat after Christmas for silly prices as they’d rather not have it sat around.  Surely it’s out of date soon you cry!  Nope, this massive tub I purchased for only 40p last December (2012) doesn’t run out of date until May 2014!!!  What’s more, being the amazing product it is, it lasts 6weeks once opened, so as a result I didn’t even open it until 2 weeks ago at the Tynemouth Christmas Shopping Night where I baked Mincemeat Macaroons for charity at Ruby & Frank and still had SHED LOADS of the mincemeat left. This recipe came in a dream…I jest but you get the gist.  I love bacon, I love maple syrup and pecans go well with both so it only seemed to make sense for this concoction to come about. Equally I scoured the web for a fair while and couldn’t find anything like this which left me with a challenge!  These are delicious because of the contrasting flavours which marry so well together, what’s more they really feel like a treat and always get a great reaction.  Feel free to mess around with the recipe, suggest any changes or shamelessly devour an entire batch…Happy Baking Bacon-ettes! Side Dish Spectacular – USA stylee (of course!)

I’m back!!!!  I know you’ve all missed me but it’s been a mental few weeks.  In between planning a staff Christmas party, the school Christmas show, a trip ‘darn sarff’ to see family and hosting our New Year’s Eve shenanigans; I have been baking and cooking but not logging it on here…same on me I know!  Anyhoo, i’m back in the baking-saddle and ready to share some more tantalising delights with you.  What better way to start 2013 than with a savoury sensation….Mac ‘n’Cheese and BBQ Baked Beans…hold your drooling peeps this ones a belter!!!

ZoBird’s version of the Pieminister Matador!

Some very exciting things happened this week!  Firstly I broke up for half term; whoooop says all fellow teachers, ‘lazy gits’ scowls everyone else!  Secondly I went to London with a friend to see our mate Rachael who moved down there a couple of months ago. Thirdly we went to Pieminister!!!!!  If you’ve never been here you MUST go, the pies are epic, with amazing flavour combinations, perfect accompaniments and lovely friendly staff…a visit should be compulsory when you visit London.  As you can see in the picture above I got very excited to be there and after purchasing the Matador decided I would need to make this myself at home. So whilst ploughing through my monthly ‘acquired’ FREE Asda and Morrison’s magazines I stumbled across a recipe that involved yorkshire puddings with chorizo and goats cheese.  Hang on, I thought, that would be tasty in muffins and hence the below recipe surfaced.  Based on a tried and tested recipe which normally requires yoghurt, I always replace this with sour cream as it’s what we generally have left in the fridge needing to be used up following a fajita night!  Enjoy :) Continue reading »
