Rhubarb Chutney & Rhubarb Crumble – How to deal with a Rhubarb-Glut!!!

Anybody who knows me, knows that Christmas = ZoBird Hampers.  My Dad in particular is very hard to provide gifts for, bar novelty fishing t shirts and humorous mugs, so a hamper is the best opportunity for me to create tasty goodies, using up the glut of home-grown veg/fruit, whilst adding the extra loving touch of something home-made and tasty!  My Mum is also always asking for the next jam or chutney…she loves my home-made jam slavered over ice cream or crackers…as you can tell i’m in high demand!  Unfortunately the poor likes of my work-mates, get fobbed off with jars of tasty delights each year, whether they like it or not.  So here is an opportunity to start your Christmas shopping early.

Today has been rather eventful as last year I froze some blackberries that I’d picked with my bestie Ollie, whilst also bagging up the leftover garden apples and some cheap blueberries from the supermarket.  As a result these created a multi-fruit ominous jam!  Om nom!  On top of this the rhubarb in the garden was getting C-R-A-Z-Y!  Last year my fiancé Grant brought me a baby rhubarb…he was so cute in his little tub, one crown and petite…this year this happened:

Time to top and tail…leaves are poisonous peeps!

I am writing this post after a rather successful rehearsal at school with my awesome Music & Theatre Productions students who are in the process of putting on Our House; the brilliant Madness musical!  Knowing I would be ins school all day today I baked up some delectable delights last night so that I had some goodies for my work peeps on a dreary Monday morning.  So many fo you will know that it was only Wednesday that lent began and so my battle with our office begins – it used to just be 1 or 2 people ditching their sweet tooth cravings, but this year all the girls (bar me of course!!) have chosen to give up sugary based treats.  This makes my life very difficult as I am, at heart, a sweet baker through and through.  That doesn’t mean I don’t love savoury, you’ll see in my previous posts that I do relish a savoury challenge, however I am at my happiest when I am at my sweetest :) .  That’s why this is a double WHAMMY post…a savoury recipe which gives you the core ingredients needed for a sweet based bake too.  The Coffee & Nutella Kisses are made from the left over egg white from the Marmite, Cheddar & Parmesan Morsels; and we all know I HATE waste, so it was inevitable that all parts of the egg would be used! Lancashire Cheese & Onion Pie

This pie has been a bit of a favourite each time I’ve made it but I got a very specific request from my mate Ollie’s Dad.  This is normally a Cheshire Cheese pie but Peter is a very proud Lancashire man and was adamant that the only kind of cheese pie should be one with Lancashire cheese in.  The fab thing about this pie is that the type of cheese can be any that you favour most; just be aware that drier crumblier cheeses will need an additional creamier cheese to help bind the pie together and to save it from drying out.  I found the initial recipe on the Baking Mad website which is wonderful and you should definitely sign up so you can receive their free emails. Side Dish Spectacular – USA stylee (of course!)

I’m back!!!!  I know you’ve all missed me but it’s been a mental few weeks.  In between planning a staff Christmas party, the school Christmas show, a trip ‘darn sarff’ to see family and hosting our New Year’s Eve shenanigans; I have been baking and cooking but not logging it on here…same on me I know!  Anyhoo, i’m back in the baking-saddle and ready to share some more tantalising delights with you.  What better way to start 2013 than with a savoury sensation….Mac ‘n’Cheese and BBQ Baked Beans…hold your drooling peeps this ones a belter!!!
